Interestingly, despite being from the onion family, classic olive oil leek recipes also call for onions, because of the extra sweetness and depth of flavor they add to the dish.

Ingredients for the Olive Oil Leek Recipe
- 1 kilo of leeks
- 1 medium onion
- 2 large carrot
- 2 teaspoon of granulated sugar
- 1 tea glass of olive oil
- 2-3 tablespoons of rice
- 2 cups of water (same level as leeks)
- salt
Fabrication:
- Cut the carrots into 2 pieces lengthwise and slice them diagonally. Chop the onion into bite-sized pieces.
- Make sure to peel the first layers of the leeks and slice them obliquely.
- Heat the olive oil in a pan and fry the onion until it becomes transparent. Add the carrots and fry for about 1 minute.
- Stir in the leeks
- Add salt, sugar, water and rice and cover the oiled paper you have prepared.
- Close the pot lid and cook over medium heat until it boils, then over low heat for about 25-30 minutes.
- Serve either warm or cold.
