Seasoned Spinach Soup with Chickpeas

Istanbul has been under heavy snowfall since Friday. On such cold days, even the thought of boiling soups on the stove is enough to warm me up. Seasoned Spinach Soup with Chickpeas was also a delicious and satisfying alternative for such days. I add 1 clove of crushed garlic to it along with salt.

Ingredients for Seasoned Spinach Soup with Chickpeas
- 250 g of washed spinach
- 1 medium onion
- 1 cloves of garlic
- 4 water glass of water
- 1 cups of broth
- 2-3 tablespoons of olive oil
- salt
For dressing:
- 5 tablespoons of yogurt
- 1 egg yolks
- 2 tablespoons flour
For service:
- olive oil
- red chili pepper
- dry mint
- optional boiled chickpeas
How to Make Seasoned Spinach Soup with Chickpeas Recipe?
- Chop the onion. Chop the washed and sorted spinach.
- Put the olive oil in the pan, fry the onion until it turns pink. Add the spinach and fry for another 2 minutes.
- Add the chickpeas, add 4 glasses of water and 1 glass of broth and bring to a boil over medium heat.
- For its dressing, whisk the yogurt, egg and flour in a large bowl.
- Take 1-2 ladles of the boiling soup, add it to the seasoning and continue whisking.
- Add the warm seasoning to the soup and mix.
- Boil the soup, in which you added salt, for 1 more time.
- If desired, fry chickpeas, red pepper, dried mint and olive oil in oil and pour over the soup and serve.
