Oven Eggplant with Chickpeas
Try eggplant and chickpeas like this😍 It will leave a mark on the palate and it will be a recipe you will cook again and again! Ingredients for Baked Eggplant with Chickpeas
- 4 medium eggplants
- Olive oil
- Salt
For Haydari:
- 1 glasses of yoghurt
- 1 pinch of dill
- 1 large cloves of garlic
- Salt
Chickpea:
- 1,5 cup boiled chickpeas
- 1 meal spoon tomato paste
- Su
- Olive oil
- Salt
How to Make Oven Eggplant Recipe with Chickpeas?
- Peel the eggplants, cut them lengthwise into 4 parts without separating them from the stem.
- Bake at 200 degrees for 12 minutes with a little olive oil and salt.
- While the eggplants are cooking, fry the tomato paste in olive oil, add the chickpeas and fry them. Add water and salt and cook the chickpeas until their water is gone.
- Mix yogurt, chopped dill, garlic and salt.
- Take the cooked eggplants on a plate, spread the haydari and serve by adding chickpeas.
