Ingredients for Pomegranate Quinoa Salad Recipe
- 1 cup of quinoa
- Quarter bunch of parsley
- Quarter bunch of spring onions
- a quarter bunch of fresh mint, optional
- 1 pomegranate seeds
- The juice of half a lemon
- 2-3 tablespoons of olive oil
- salt
- black pepper
How to Make Pomegranate Quinoa Salad Recipe?
- Take the quinoa in a small saucepan. Add water until it is 2 inches above it and leave it in water for 30 minutes.
- While the quinoa is resting, chop the greens that you wash and leave to drain.
- Cut the pomegranate in half. Place the cut half in the palm of your hand and tap it with the help of a spoon to extract the grains as in the video.
- Add 1,5 cups of water to the quinoa that you filtered first, and close the lid of the pot. Cook over medium heat until soft and bursting (15 minutes).
- If there is excess water left in the cooked quinoa, drain it and let it rest to cool.
- Add lemon juice, olive oil, salt and pepper to the chopped ingredients.
- Add the cooled quinoa, mix and serve.
