As you know, I haven't been making cakes for a long time, except for the birthdays of my loved ones. That's why I don't have many cake recipes on my blog. I think that the reason for the birth of this cake is the relief of the palate, which has long been overwhelmed with heavy cream and sugar paste :)

As the name of Naked Pasta suggests, the top of the basic cake building blocks (sponge cake, cream, fruit or chocolate) is made of sugar dough, whipped cream or ganache It is made by preparing it without being covered with water and without too much ornamentation. The layers of the cake are visibly ready with the correction of a very, very thin layer of cream. As such, the important thing here is that your sponge cake is good and separated into neat layers.

As for the decoration part, it is possible to prepare an eye-pleasing presentation by placing fresh fruits, real flowers or flowers made of sugar paste.

I preferred fresh flowers and very, very little fruit. Keep in mind that going to the flower shop for this can cost a little. It would be more appropriate to find a florist sister and buy flowers one by one according to the concept you have created in your mind.

Tried and liked many times by you before cocoa sponge cake I used my recipe. The only difference is that this time my mold was 18 cm in diameter and 8 cm high. The choice of fruit is up to you, but I used one layer of banana and one layer of strawberry, you can only make it with banana.

Since I prepared the sponge cake on the same day, I waited for it to cool and separated it into patties. I didn't soften it with any liquid as it was fresh and soft. Keep in mind, let it rest a little after layering it, being warm may cause the cream to melt.

Naked Cake – Ingredients for Uncoated Cake Recipe

  • 6 medium egg
  • 1 cup powdered sugar
  • 1 water glass flour
  • 1-2 drops of vanilla flavoring
  • half a pack of baking powder
  • 1 pinch of salt
  • 3 soup spoons of cocoa
  • butter to grease the bottom of the mold

For the cream:

  • 500 ml sugar whipped cream (I wrote the description above)
  • 100 gr fresh cheese (can also be labneh)
  • half a cup of powdered sugar

For between:

  1. Separate the whites and yolks of the eggs.
  2. Add a little granulated sugar and a pinch of salt to the egg whites and whisk until they are like snow.
  3. Add the remaining powdered sugar and vanilla flavoring to the egg yolks. Beat until the granulated sugar dissolves and the yolks turn white.
  4. Mix the egg whites that you have fluffed with a spatula from the bottom up in 3-4 times and mix them into the egg yolks.
  5. Sift the flour, cocoa and baking powder into the egg mixture and add them in 2-3 times.
  6. Lay greaseproof paper under the circle mold and press it by folding the edges so that the dough does not flow.
  7. Grease the parchment paper with butter and pour the sponge cake dough into the mold.
  8. Bake in the oven preheated to 180 degrees for 30-35 minutes.
  9. Let the cooked sponge cake cool on a wire for at least 1 hour.
  10. Carefully separate the cake from the mold by inserting a knife into the edge of the mold.
  11. Divide the sponge cake into 3 pieces and let it rest for 1 more hour.
  12. Take the cream you have cooled in the refrigerator into the mixer bowl, add the fresh cheese and powdered sugar into it and beat for 3 minutes.
  13. Put the cake base on the serving bowl and squeeze a layer of the cream you put in the icing bag on top. Sweat the sliced ​​fruits on top and put a second layer by squeezing a little more cream and smoothing it with a spatula.
  14. On the 2nd floor, squeeze the cream with the cream squeezing bag and put the sliced ​​fruits on it and smooth it with a spatula by squeezing some cream on the fruits.
  15. Place the top layer of the cake and squeeze the remaining cream on top and smooth it with the help of a spatula.
  16. Garnish with fresh flowers and fruits, if desired. Store in the refrigerator until serving.
