Sour Leaf Peas

I had the opportunity to cook Sultani peas, also known as leaf peas, very often this year. Speaking of olive oil and spring rice, I also wanted to share a very delicious alternative that you can consume as a side dish with salads or meat dishes.
I recommend you to definitely try this delicious pea, which you can even make a salad from raw when fresh ☺️

Ingredients for Sour Leaf Peas Recipe
- 500 g green peas (sultani peas)
- 3 cloves of garlic
- 1 small piece of ginger
- 4-5 tablespoons of olive oil
- 4-5 tablespoons of pomegranate syrup
- 1 medium carrot
- 1 medium size capia peppers
- 1 dried pepper (optional)
- 1 handful of sesame seeds
- 2 stalks of scallion
Fabrication:
- Wash and clean the green peas.
- Finely chop the ginger and garlic. Chop the pepper and carrot as well.
- Fry the garlic and ginger in olive oil. Add carrots and capia pepper and fry a little.
- Add the peas and salt and fry until they start to release their water.
- When the volume in the pan decreases to half, add sesame seeds and pomegranate syrup, cook a little more and remove from the stove. Add the spring onion and mix.
- Serve hot or cold as desired.
