Roasted Mushrooms (Kanlıca Mushroom)

Now is the time for Kanlıca mushrooms :) My father-in-law went to Kastamonu last week, after it rained in the village where he lived, the whole forest was full of mushrooms. In his childhood, they used to go out to the forest to collect mushrooms after every rain. Thereupon, they went out to the forest to collect and about 10 kilos of old mushrooms were collected.

I stopped by last night and bought the mushrooms, as soon as I got home, I started the preparations by washing them in plenty of water. The top of the Kanlıca mushroom is sunken inwards, and its color turns orange. It has a very crunchy texture. When you boil it with plenty of water, the mushroom, which is slightly bitter when raw, turns into an incredibly delicious food.

mushroom dishes

You must add lemon to the boiling water so that it does not turn black. I cut the large mushrooms into small pieces, and boiled the small ones whole in a separate pot. I'm thinking of making a nice meat dish with small mushrooms :)

You can consume the roasted mushroom you have prepared simply, or you can use it as a filling in pancakes, pies or different pastries. Famous people of Kastamonu to meat loaves As an alternative to the mushroom bread they make, they use stuffed mushrooms they collect from the forest in this way, and they are incredibly delicious. I recommend you try it.

Love…

Dear Nilay, when I saw the bloody mushrooms in the district market, I couldn't resist and bought them immediately. Now, the onions are being roasted in the kitchen on the one hand and I boiled the mushrooms on the other. I'm making the recipe exactly the same.

In Milas, we call the kangaroo mushroom sycamore. It is just the season. It is never poisonous, it grows in forests, the best cooking method is flavored with olive oil, salt, black pepper and cooked on the barbecue. The second method is the sycamore is boiled, its water is filtered, the water is covered in flour, it is fried in oil. Lemon with garlic is poured over the sycamores. In the 2rd olive oil, the onion is pinked, the sycamores are chopped into small pieces, and roasted by adding red pepper, black pepper, salt. During the service, lemon syrup with garlic is poured over it.

I prefer to make this mushroom in the oven or it can be on the barbecue.
After washing it, I place it randomly on the baking tray, add enough salt and butter on it, cook it for 20 minutes, then grate the Vakfikebir cheese on it and continue cooking until it melts.
Do not drain the water completely and eat it with bread and see the flavor.

separate the mushrooms from their stems, wash them, arrange ring onion rings and tomato rings on the pot on two layers.
Add a tablespoon of black pepper, salt, olive oil, and a tablespoon of butter, close the lid and cook for 20-30 minutes.

Hello. I also tried it, because I knew it was very delicious, I brought it especially from bolu. But unfortunately it was not tasty at all. I soaked it in lemon water and washed it thoroughly. I roasted the onions and peppers, added the mushrooms, added salt, and cooked it on low heat with the lid closed. I added pepper. Where did I go wrong, how could I cook it, it would be more delicious?

I also love this mushroom. It can be fried like a steak and it is much more delicious than meat. By the way, it suits bulgur pilaf very well.

I love mushrooms very much, but I have been longing for how many years I was afraid of its danger. This mushroom, which is called tirmit in the Black Sea, happens in the hazelnut fields in summer, after the rain, and after it is cleaned, it is fried. How can I say when I eat it, it tastes like roasted tripe, it is very delicious. I can't eat it now because of fear, even though I know it's safe. I have to get over it because it's a flavor I miss.
Good luck to your hands, Ms. Nilay, thank you

Mrs. Saime, you are right. Normally, I don't trust mushrooms other than the ones I buy from the market, but when there are people who have been collecting them for years, this mushroom is much easier to consume than other mushrooms, so I can consume it with peace of mind.

It really has an incredible taste, I can prepare very practical recipes when I use it by putting it in bags in the freezer when I roast it. I hope you will get rid of this fear soon. Yours sincerely

I live in Denizli, here it is called Çıntar, the species you call Kanlıca mushroom and it is present in abundance in our highlands. :)

But let me tell you an important point, this type of fungus produces worms quickly. After washing, cut the stem part very close to the head, the worm usually occurs here, if there is no worm, you can easily consume it.
