A simply wonderful recipe from our family's only cook, Melek Aunt. I was with you in the making and believe me, the taste is perfect. Perfect with pastry cookies. It is so light that it melts in your mouth.

Aunt Melek, good luck to you. Enjoy everyone :)

Ingredients for Patisserie Cookie (Salted) Recipe

  • 2 eggs (1 yolk will be reserved on the cookies)
  • 125 gr. margarine
  • 1 teaspoon of yogurt
  • 1 teaspoons of oil
  • 1 teaspoon of sugar
  • 1 sweet spice salt
  • 1 package baking powder
  • 1 teaspoon mahleb
  • juice of half a lemon
  • flour

How to Make Patisserie Cookie (Salted) Recipe?

  1. 1 egg + 1 egg white is placed in a hollow bowl. Other ingredients are added on it and kneading begins (I recommend pouring it little by little so that you can get the flour consistency).
  2. When you get a dough with a slightly sticky consistency, it is shaped by hand and 2-3 cm. are arranged at intervals.
  3. Egg yolk is brushed on it, sprinkled with sesame seeds, and baked in a preheated oven at 180 degrees until golden brown.

Note: In order to get a brighter appearance, it is enough to add 1 teaspoon of vegetable oil to the egg yolk and whisk it. (I learned this from Aunt Melek :)

No, unfortunately, liquid oil etc. is not used in patisserie products, they even use a type of margarine called anhydrous oil.

If you want it to be like the ones bought from the patisserie, mahaleb is necessary. dr.oetker's ready-made baking powders have mahaleb. mahlepli-sesame flavored or mahlepli black cumin flavored. Mahleb is an expensive spice, but it gives a nice scent in pastries and cookies. For example, easter buns are indispensable without mahlep.

    half margarine,
    1,5 teaspoons of salt,
    1 teaspoon of sugar,
    2 tablespoons of yogurt,
    2 baking soda,
    2 teaspoons of vinegar,
    2 eggs
    flour as possible
    FABRICATION:
Add all the ingredients together, just leave the sugar yogurt and the first egg at the end. When the kneading process is finished, add sugar, yogurt and eggs and knead well. Spread margarine on the bottom of the tray. Spread the yolk of the egg on it and sprinkle the black seed, the process is complete. Enjoy your meal.
