Hello Dear Friends,

A delicious recipe that I often cook, one of the legendary flavors of our childhood. mahaleb mother pastry.

Mahlep is the fruit of the mahaleb tree (also known as the idris tree or wild cherry). The seeds of the ripe fruits of this tree are dried and ground to become the powder we know as mahaleb. I think the kernels are similar to apricot almonds :)

Ingredients for Mahlep Mama Pastry Recipe

  • 1 package of Sana Dough at room temperature
  • 1 tea cup oil
  • 1 glasses of yoghurt
  • 1 package baking powder
  • 1 egg (white on dough – yolk on top of pastries)
  • 3,5-4 glasses of flour
  • 1 pinch of salt
  • 1 teaspoon mahleb
  • Sesame
  • black seed

For inside:

  • Half a glass of white cheese
  • 1 pinch of finely chopped parsley

How to Make Mahlep Mama Pastry Recipe?

  1. Put the margarine, yogurt, oil and egg white at room temperature into the mixing bowl.
  2. Add 1 pinch of salt, mahaleb, baking powder and 3 cups of flour on top and start kneading.
  3. Add 1 cup of flour little by little and knead a dough that does not stick to the hand.
  4. Break off tangerine-sized pieces from the dough you kneaded and roll them in your hand.
  5. Mix all the ingredients you have prepared for the stuffing. Put 1 pinch of filling in the middle of the dough that you spread by pressing with your hand and close it. Place on the greased baking tray.
  6. Do the same until all the dough is gone.
  7. Brush the egg yolk over the buns. Make a mark with a fork and sprinkle with black cumin and bake in the oven preheated to 180 degrees for 35 minutes.
  8. Serve hot or warm.
