Ingredients for Curd Roasted Eggplant Salad Recipe
- 2 tablespoon of olive oil
- 1 capsicum peppers
- 2 roasted eggplant
- 4 tablespoons of cottage cheese
- 3-4 leaves of arugula
- Salt
- Black pepper
- Thyme
- Pulp pepper
- 1 teaspoon roasted sesame
How to Make Roasted Eggplant Salad with Curd?
- Take the olive oil in a medium sized pan. Saute the finely chopped capia pepper in oil.
- Add the roasted eggplant on top and sauté for 1 minute.
- Take the pan off the heat, add the curd cheese, thyme, salt, black pepper, paprika and roasted sesame seeds and mix well.
- When the mixture has completely cooled, add chopped arugula and serve.
