Lemon Cookies
Hello Dear Friends,
At the weekend, I escaped from the city and spent some time in the garden in the vineyard. I picked lemons, pomegranates, olives and even tangerines from their branches. I feel very energetic when I start the week with the vineyard or garden therapy, which is like a medicine for the tiredness of the weeks :)
My future dream is a small garden with fruit trees in it :) Everyone has a dream, mine is just like that. Except for my cat at home, we can live in the garden when we say a dog, maybe 2-3 chickens :)
When dreams are vineyard or garden life in Istanbul, we can only enjoy such peace for limited times for now, but I have hope!
Anyway, let's come to my Lemon Cookie recipe, I will prepare 3 different recipes from the lemons I collected this week. As you can see, I declared this week as lemon week :) We definitely do not put baking powder in our cookies. The lemon flavor is just right, thanks to the butter in it, it is delicious enough to crack the checkers.
Remember, if your glasses at home are large, reduce the amount of flour and do not touch the cookies while they are cooling because they will still be soft.

Ingredients for Lemon Cookie Recipe
- 250 g butter
- 1 cup powdered sugar
- 1 eggs (large)
- 1 teaspoon lemon zest
- 1 tablespoons lemon juice
- 6 cups of flour (115 gram glass)
How to Make Lemon Cookie Recipe?
- Chop the cold butter into cubes and let it sit until it comes to room temperature.
- Take the room temperature butter and granulated sugar into the mixer bowl and whisk until it reaches a creamy consistency. Add the egg and whisk until completely mixed.
- Add the lemon zest and lemon juice, continuing to whisk.
- While the mixer is running, add the flour cup by cup. When it's all done, take the dough to the counter and quickly assemble it.
- Cut off walnut-sized pieces and roll them.
- Bake in the oven preheated to 180 degrees for 18-20 minutes.
- Cookies from the oven will be soft. Wait until completely cooled and serve.
I made a recipe for the evening yesterday, actually it was very good, only the lemon flavor was less for us, personally I smelled the taste of butter more. but it's a very tart recipe, next time I'm thinking of increasing the lemon peel.
