Currant Cake

We returned to Istanbul last night. Now I have to slowly start the preparations for my African journey. I need to get ready, but I'm confused because winter has started in the Southern hemisphere :) While it's burning in Turkey, we can get cold there.

Grape cake
While I was thinking about these, I thought I would publish my accumulated recipes as soon as possible. The only thing you need to pay attention to in currant cake and chocolate chip cake is to soak the currants before using them and wait for them to swell a little. If the grapes are not soaked, they may become crispy in your mouth. Love…

Ingredients for Currant Cake Recipe

  • 3 pieces of eggs
  • 1 cup powdered sugar
  • ¾ cup hazelnut oil or vegetable oil
  • ¾ cup of yogurt
  • 1 coffee cup of currants
  • half a glass of chocolate chips
  • 1 package baking powder
  • 1 packet of vanillin with sugar
  • 3 drops of almond flavor
  • 2,5-3 cups flour

How to Make Currant Cake Recipe?

  1. First of all, put the currants in a bowl and fill it with warm water and wait. Put the sugar and eggs in a whisk, when the mixture turns white (until the sugar is completely dissolved), beat it first at low speed and then at high speed.
  2. Add yoghurt and hazelnut oil to the white eggs and continue beating.
  3. Add the flour, vanilla and flavoring and mix until you get a smooth dough.
  4. Lastly, add the baking powder, strained currants and chocolate chips and mix 1-2 more times.
  5. Grease the cake mold and pour the batter into the cake mold.
  6. Bake in a preheated 180 degree oven for about 35-40 minutes. You can tell whether it is cooked with the help of a toothpick or knife. (If the toothpick inserted in the cake comes out wet, cook for a few more minutes)
  7. Slice and serve after cooling.

I loved the raisin cake, but it was always sinking to the bottom. With this recipe, it was exactly as in the picture. Taste was also great :) thank you for your effort..
