For a long time I had in mind to prepare a different and practical recipe with dried eggplants. Finally got the chance last night. After boiling the eggplants until soft, it is enough to chop them in finger thickness.

My dried aubergines were dried for stuffing. You can boil the dried ones by chopping slices or fingers and use them directly.

Ingredients for Dry Roasted Eggplant Recipe

  • 8-9 large dried aubergines (boiled)
  • 1 medium onion
  • 1 cloves of garlic
  • 1 meal spoon tomato paste
  • 4 tablespoon of olive oil
  • salt
  • black pepper

For service:

  • garlic yogurt

How to Make Dry Roasted Eggplant Recipe?

  1. Take the dried aubergines in a pot of boiling water and boil them until they are soft.
  2. Drain the boiled eggplants, rinse and leave to drain. Chop the drained aubergines into finger thickness.
  3. Chop the onion, finely chop the garlic.
  4. Saute the onion in olive oil until golden brown, add the tomato paste and fry for 1 more minute.
  5. Add the chopped eggplants to the pan. Add the garlic, salt and pepper, fry for another 5-6 minutes and remove from the stove.
  6. If desired, serve by pouring the oil you have heated with garlic yoghurt and chili peppers.
