Dried Fruit Oatmeal Sugar Free Cookies

Last month, when a friend brought me one of the oatmeal sugar-free cookies prepared by her nephew, I liked it very much and immediately asked for the recipe. It is known that summer is at the door and everyone is trying to get in shape by cutting the sweet pastries as much as possible.
This recipe is really delicious and satisfying, and you can consume it as a snack next to your tea or coffee if you want. Dried blueberries are now available in all major supermarkets, either open or closed. If you say you can't find it, you can use raisins instead of blueberries.
The consistency may vary slightly depending on the humidity of the coconut grater you use. Mine was very dry, I used 2 times the normal size to get the consistency. I played with the amount of honey a little to make it sweeter and the dough to stick. You can increase the amount of honey or water until you have a dough that holds as I have shown in the video.

Ingredients for Dried Fruit Oatmeal Sugar Free Cookies Recipe
- 1 cup grated coconut
- half a glass of crushed walnuts
- half a cup of dried blueberries
- 1 cup of oatmeal
- 1 cup whole wheat flour
- half a glass of olive oil
- 1 teaspoon of baking soda
- 3 tablespoon of honey
- 3-4 tablespoons of water
How to Make Dried Fruit Oatmeal Sugar Free Cookies Recipe?
- Mix the coconut grater, whole wheat flour and oats in a deep bowl.
- Add baking soda, dried cranberry and walnut pieces and mix again.
- Add olive oil, honey and water and knead the dough until it gets a consistency that does not fall apart when you squeeze it.
- Portion the dough with your hands or an ice cream scoop and place on a baking tray lined with greaseproof paper.
- Bake in the oven preheated to 180 degrees for 10 minutes until the cookies are browned.
- Serve warm or cold.
