Cacik is a recipe that everyone knows and interprets differently. I think in this case, it has an effect on the habits inherited from the family as much as the taste. For example, tzatziki was always made juicy and without mint at my mother's. I think I was very surprised when I saw Dry Cacik in a Van Breakfast Restaurant for the first time (it seemed very different both to serve it for breakfast and to make it with strained yogurt).

Sometimes I see dill added to dried cacık, but I think it definitely spoils its flavor, and even the flavor starts to resemble haydari. When making tzatziki, avoid using too much dry or fresh spices that will suppress the flavor of garlic, cucumber and yoghurt. Fresh mint, which is used without exaggeration for an extra refreshment, also suits.

The thing that affects the consistency of dry cacık the most is cucumber. If your yogurt is not too thick, you can strain the excess water by squeezing the grated cucumber with your hand without crushing it too much. If you are using a solid yogurt, you can add it without straining and mix it to get a more creamy consistency.

Without forgetting, let the cacık you prepared rest in the refrigerator for at least 1-2 hours so that it absorbs its flavor.

Ingredients for Dry Cacik Recipe

  • 4-5 almonds (thin-skinned tiny cucumbers)
  • 7-8 leaves of fresh mint
  • 2 glass of strained yogurt
  • 3 cloves of garlic
  • Salt
  • Extra virgin olive oil

How to Make Dry Cacik Recipe?

  1. Take the strained yogurt in a deep and wide bowl and mash it with a fork.
  2. Wash and dry the cucumbers and grate them into a small bowl. (if necessary, strain the water by squeezing it with your hand)
  3. Grate the garlic with the fine side of the grater and add to the tzatziki.
  4. Finally, add the finely chopped mint leaves and salt and mix.
  5. After resting the cacık in the refrigerator for 1 hour, take it into a serving bowl and serve with olive oil on it.

    This is the first time I've heard of dry cacik being made in Van, the Greeks consume it this way and it's extremely common. If you add a little olive oil and mix it in the preparation stage, it will be much more delicious. The second point is that the garlic should be added by crushing it with salt, not with a grater.
