Ingredients for Green Lentil Salad with Roasted Peppers

  • 1 glass of green lentils 
  • 4-5 stalks of spring onions
  • quarter bunch of parsley
  • 4-5 pickled cucumbers
  • 1 roasted red pepper
  • 1 cup of corn kernels
  • pomegranate seeds

For the sauce:

  • 4-5 tablespoons of olive oil
  • 1-2 tablespoons of balsamic vinegar
  • 1-2 tablespoons of pomegranate syrup
  • salt

How to Make Green Lentil Salad with Roasted Peppers?

  1. Boil the green lentils and let it drain by straining it through plenty of water.
  2. For the sauce, take pomegranate syrup, olive oil, balsamic vinegar and salt in a deep mixing bowl and whisk.
  3. Finely chop the spring onions and parsley.
  4. Chop the pickled cucumber and the red pepper.
  5. Take the chopped ingredients into the mixing bowl. 
  6. Add the corn and pomegranate seeds, mix and serve.
