Chickpeas, peas and ball meatballs are the things that are not missing from the freezer in our house (especially after I have children) :) I try to increase their nutritional value and make them more satisfying, especially by adding them to soups.

Spring soup

spring soup I think there is hardly anyone who doesn't like it. In our house it is usually quickly cooked from leftover rice. Right now, our new favorite is the one with ball meatballs :) You can take it out of the freezer and fry it in a saucepan and add water, or you can add the meatballs to the boiling water, cook and add the rice. It's entirely up to your taste.

Ingredients for Meatball Plateau Soup Recipe

  • 1 cup of rice (more or less)
  • 5 water glass of water
  • 1 fingers missing yoghurt from 2 glass of water
  • 1 teaspoon of dried mint
  • 1 red chili pepper
  • 5 tablespoon of yoghurt
  • 1 egg yolk
  • Salt

For the meatballs:

  • 150 grams of medium-fat ground beef
  • Half of 1 small onion
  • 1 tea spoon salt
  • 1 tea spoon black pepper

How to Make Meatball Plateau Soup Recipe?

  1. Take the minced meat, grated onion (squeeze the juice with your hands), salt and pepper in a deep bowl and knead. Make marble-sized balls and set aside.
  2. Take the boiling water in a saucepan, add the meatballs and bring to a boil. When the meatballs are cooked, add the rice.
  3. Whisk the egg yolk and yogurt well in a bowl.
  4. Add 2 scoops of yoghurt from the boiling soup water and mix.
  5. Keep stirring the soup while slowly adding the seasoning to the soup.
  6. While the soup is boiling on low heat, add the mint you roasted in oil and optionally the chili pepper.
  7. After boiling for 5 more minutes, add salt, mix and serve by taking it from the stove.
