Meatball Rolled Eggplant

The last recipe of the week is a flavor that I love very much. most of us Islim or toothpick kebab he knows. Earlier I also published the chicken, this recipe won't bother you that much, and it's much lighter because we grill it instead of frying it.
We keep the meatballs a little big and turn them in the pan until they are lightly browned so that they do not dry out while baking in the oven. Cooked meatballs already leave some oil and water, so you don't need to use too much oil in tomato sauce.

Ingredients for Meatballs and Eggplant Wrap Recipe
- 3 medium eggplants
- 300 g ground beef (medium fat)
- 2 tablespoons of breadcrumbs
- 1 medium onion
- 2 cloves of garlic
- 1 pinch of parsley
- salt
- black pepper
For the sauce:
- 3 medium tomatoes (ripe)
- 1 cloves of garlic
- 2 tablespoon of olive oil
- salt
- black pepper
How to Make Meatballs and Eggplant Wrap Recipe?
- Grate the onions and garlic. Finely chop the parsley.
- Take the minced meat in a deep mixing bowl, add salt, pepper, breadcrumbs and other ingredients on it and knead.
- Divide the meatballs into 8 portions. First, shape it into a ball, continue to roll it gently in your hand, form a cylinder and put it in the refrigerator to rest.
- Wash the eggplants and slice them a little more than half an inch thick. Heat your grill or cast iron skillet.
- Drizzle a little oil on the sliced eggplants and sprinkle with salt and pepper and cook on the grill until it leaves a mark.
- While the eggplants are cooling, fry the meatballs in a pan without oil. (It's enough for the meatballs to turn brown.)
- Take 1 eggplant slice, if it is thin, put another one next to it and wrap the meatballs on it.
- Take the wrapped eggplant roll on the baking tray, do the same with all the meatballs.
- Put the tomatoes you have passed through the blender into the sauce pan with the oil. Add salt, pepper and garlic and cook until the Tomatoes are slightly wilted.
- Pour the sauce over the eggplant rolls, bake in a preheated oven at 180 degrees for 20-25 minutes.
