Ingredients for Meatballs Recipe

  • 4 medium eggplants
  • 1 medium potatoes
  • 1 red capia pepper
  • oil for frying

For the meatballs:

  • Minced grams of 250
  • 1 small onion
  • 1 tea spoon salt
  • 1 tea spoon black pepper
  • 1 pinch of parsley
  • 1 small clove of garlic

For the sauce:

  • 1 heaping tablespoon of tomato paste

Fabrication:

  1. Wash and dry the eggplants and peel the variegated. Make sure not to cut it in half and fry it in hot oil until soft.
  2. Take the fried eggplants on a paper towel and leave to cool.
  3. Cut the potato and red capia pepper into cubes and fry them until they turn lightly in color, then take them with the eggplants and leave to cool.
  4. For the mortar, take the onion and garlic in a rondo and mash them. Add the minced meat, parsley, salt and pepper and mix well.
  5. Take small pieces of the mortar you prepared and prepare meatballs by rolling them in your hand.
  6. Stuff the meatballs and the peppers and potatoes you pre-fry into the eggplants.
  7. Mix all the ingredients for the sauce and pour into the baking dish with the eggplants.
  8. Bake the meatballs in the oven preheated to 200 degrees until they are cooked and serve.
