Artichoke Kebab with Meatballs

Ingredients for Meatballs:

  • 200 g minced meat
  • 1 onion
  • 2-3 slices of stale bread (you are lucky if you grind stale bread in the robot beforehand and store it in the freezer bags, like me)
  • 3-4 sprigs of parsley
  • Salt, pepper, cumin

Other Ingredients:

  • 8 artichokes
  • 4 tomatoes
  • 3 long green peppers
  • 1 dessert spoon tomato paste
  • 2 tablespoons of oil
  • 1 cup of hot water

How to Make Artichoke Kebab with Meatballs Recipe?

  1. First, grate 3 tomatoes and finely chop the green peppers. You can add some salt at this stage.
  2. On the other hand, after washing the artichokes, place them on a large baking tray. Cut the remaining 1 tomato transversely by 1 cm. Cut it to its thickness and divide it over 4 artichokes. Let them wait for now..
  3. Take the minced meat in a deep bowl. Grate the onion, add it to the minced meat.. Add the crumbled stale bread crumbs, finely chopped parsley, salt, pepper and cumin and knead.
  4. Cut the minced meat you have obtained into 4 pieces the size of half a lemon, roll it slightly, then flatten it a little and place it on 4 artichokes. The other artichokes will be cooked on the baking tray with the lid on.
  5. Separate half of the tomato paste sauce you prepared. Pour the remaining half over the artichokes with meatballs.
  6. Add 1 cup of hot water to the baking tray and cover the top of the baking tray with aluminum foil or if the baking tray has its own lid.
  7. Bake at 180 degrees for 30 minutes
  8. Remove the lid or aluminum foil of the baking dish you took out of the oven, cover the artichokes cooked without meatballs like a lid over the artichokes with meatballs, distribute all the tomato sauce that you reserved before, on the artichokes, and bake for another 5 minutes without covering the baking tray.
