We couldn't meet much when we said holiday etc. :) Instagram I went on a short vacation that my followers followed closely. On this holiday, we went to Mudurnuya, starting from Abant, and then to Göynük. On the way to Göynük, we stopped by 2 different natural wonders. Then, after Iznik, Yalova, Armutlu, we arrived in Istanbul at noon on Sunday.

While we were visiting Abant, we were making plans to go to Seven Lakes, so we stayed at Fuat Beyler Konağı in Mudurnu, the nearest empty hotel we found. As a matter of fact, even at the entrance to Mudurnu, those wonderful village houses and historical streets were enough to blow my mind. During our entire trip, we wandered around and took pictures from early morning until dark.

I was actually going to share the spoon-handled ravioli recipe with you today, but I caught a cold so badly that I prepared Cranberry Tarhana, which I thought would be healing with medicines, for my lunch. I plan to drink occasionally for 1-2 days.

Cranberry Tarhana I bought it from Kezban Teyze and her husband, who have a street stall in the center of Mudurnu and sell their own homemade products. In addition, I bought the spoon-handled ravioli that he had dried from the oven the morning we talked about the previous evening. He prepared so many beautiful things from hawthorn marmalade to pine cone jam that my mind was really stuck on that counter.

Anyway, what he told me was a very useful soup, as far as I read, cranberry tarhana soup was effective against colds and flu, and also strengthens the immune system. Its consistency and preparation may differ according to taste or region. Some also add roasted ground beef. I am not a fan of adding tomato paste because it is quite different in color and already has a sourness that comes from it. So if you add tomato paste, this color will not be.

Apart from that, you can drain the tarhana after melting it and then cook it, but it will be better if the dried cranberries remain. Also, if you don't like granular soup, you can grate or process the onion and garlic instead of breaking them.

Ingredients for Cranberry Tarhana Soup Recipe

  • 1 cup of dried cranberry tarhana
  • 5 water glass of water
  • 2 spoonful butter
  • 1 medium onion yellow
  • 3 cloves of garlic
  • salt

For the top:

  • Butter
  • dried mint

How to Make Cranberry Tarhana Soup Recipe?

  1. Take the dried cranberry tarhana in a medium-sized pot where you will cook it.
  2. Add 1 glass of hot water to it and stir it for half an hour from time to time to soften the tarhana.
  3. Add 4 glasses of hot water to the tarhana and cook it over low heat, stirring occasionally.
  4. Finely chop half of 1 medium onion and the garlic. In a small saucepan, add the butter and salt.
  5. Add the pink onions and garlic to the tarhana soup, which is starting to thicken, and cook for 5 more minutes, stirring.
  6. Put some more butter in the sauce pan in which you heated the onions, add a pinch of dried mint on top, and heat it by stirring rapidly until it bubbles.
  7. Take the cooked soup on a serving plate, drizzle some mint oil on it and serve.
