Minced Meat Covered Pita

The last recipe of this week is covered pita with minced meat, which you can easily prepare at home and whose soft dough you will love very much. Those who try to make pita at home often complain that the result is not good. You can be sure that you will not have this problem in this recipe.
We use both yeast and baking powder in this recipe. We mix the yeast with warm milk and sugar and use it for our dough after it swells. Another important factor for the dough to rise well is to rest it well. You can put it in your closed oven or microwave, close the lid and let it rest for 1 hour.

Ingredients for the Covered Pita Recipe with Minced Meat
- 2 pieces of eggs
- 1 water glass milk
- 1 glasses of yoghurt
- 1 glass of warm water
- 1 pack of instant yeast
- 1 packet of baking powder
- 1 teaspoon of granulated sugar
- 2 sweet spice salt
- half a teaspoon of oil
- 7 cups of flour + 1 cup of dough for kneading
For internal mortar:
- 2 medium onion
- 500 gr mince
- quarter bunch of parsley
- salt
- black pepper
- Red pepper
- 2-3 tablespoons of oil
To top it off:
- 1 egg yolk
How to Make a Closed Pita Recipe with Minced Meat?
- Take the yeast in a glass, add 1 teaspoon of sugar to the warm water and mix. Wait for 1-2 minutes. (yeast will rise and activate)
- Crack the eggs into the mixing bowl. Add milk, yoghurt, oil, and yeast that you mixed with milk and mix.
- Add 1-2 cups of flour, add baking powder on top, and add an average of 5 more cups of flour to knead a dough that does not stick to the hand. (If you add the flour cup by cup, it will be easier to stick.
- Transfer the gathered dough to the lightly floured kitchen counter and knead for another 3-4 minutes.
- Put the dough in a kneading bowl, cover it and let it rest in a warm place for 1 hour.
- While the dough is resting, pass the onion through the robot for the inner pilgrim, add a little oil in the pan and fry it. Add the ground meat and spices and fry until it releases its water and remove it from the stove and let it cool.
- Take the risen dough onto the floured worktop and divide it into 16 equal meringues.
- Open each meringues 25-30 cm long and 12-15 cm wide.
- Spread the mincemeat mortar lengthwise in the middle and close the pita dough by combining it in the middle of the pita on both sides. Do the same for all the meringues.
- Place the pitas on the greased baking tray. Brush the egg yolk on them with a brush.
- Bake in the oven preheated to 180 degrees until golden brown. Serve by slicing.
