Especially olive oil dishes, but in recent years I have started to love recipes with meat. I guess it's normal for someone who likes to eat arugula after 30 :)

Ingredients for Stuffed Zucchini Recipe with Minced Meat

  • 1 kg medium zucchini
  • A little less than 1 cup of rice
  • 250 gr mince
  • 1 large onion or 2 medium onions
  • 1 meal spoon tomato paste
  • half a teaspoon of olive oil
  • 1 pinch of dill
  • 1 pinch of parsley
  • 1 pinch of fresh mint
  • salt
  • black pepper

For the sauce:

  • 2-3 tablespoons of olive oil or butter
  • 1 meal spoon tomato paste
  • Salt
  • hot water

How to Make Stuffed Zucchini Recipe with Minced Meat?

  1. Peel the washed zucchini, divide it into 2 parts and hollow out. 
  2. Wash the rice with plenty of water and drain it well.
  3. In a bowl, mix ground beef, rice, oil, chopped greens, edible chopped onion, tomato paste, olive oil, salt and pepper.
  4. Stuff the zucchini and place them in the pot. Mix 1 glass of hot water, 1 tablespoon of tomato paste, olive oil and salt, slowly pour over the zucchini you have lined up.
  5. Add 1 – 1,5 glasses of hot water. Cook the stuffing on medium heat until the rice swells. You can serve it with garlic yogurt and dill.
