Everyone met at our cottage this holiday. When the elders of the family came, we became quite crowded. When the first and second days were finished, the people fled to the sea. Before they arrived, I decided to make a colorful and delicious cake that suits the holiday.

As you know, I made a lot of jam this year. Strawberry, Blackberry, raspberry Then I threw the extra fruit left over from these jams in the freezer to add to desserts or to decorate. Since I needed to make room in the freezer, I took out the fruits, I prepared a mother-made cake with the most basic cake recipe.

When I used the raspberry and chocolate cubes that I brought with me to the summer house, it was quite stinky :) To tell the truth, it is as delicious as a cake.

The only problem is that the choppy oven I bought here doesn't set the time properly, so I can't give the exact time. In fact, I baked it until the cake batter came out dry. In other words, when the cake rises and the knife you inserted is dry, the process is complete.

The cake ingredients I used were at room temperature, but I didn't expect the fruits to thaw. I whipped the cake, while preparing the cake batter, I added the half-thawed fruits and mixed them. There was no crash.

If you are not going to pour melted chocolate on top while preparing this cake, you can increase the amount of sugar up to 1,5 cups according to your taste. Since you are using sour fruits, it can be balanced by increasing the amount of sugar.

Ingredients for Red Fruit Cake Recipe

  • 3 pieces of eggs
  • 1 cup powdered sugar
  • 1 water glass milk
  • ¾ cup of sunflower oil
  • 1 cup blackberries
  • 1 cup raspberries
  • 1 cup chopped strawberries
  • 2,5 water glass flour
  • 1 package baking powder
  • 1 pack of vanilla

For the top:

  • 200 g raspberry cuverture chocolate
  • 100 g dark couverture chocolate

How to Make Red Fruit Cake Recipe?

  1. Beat the eggs with the granulated sugar until the sugar is completely dissolved and fluff.
  2. Add the milk and sunflower oil and whisk again.
  3. Add flour, baking powder and vanilla and mix until there are no lumps.
  4. Add the fruits and mix with the help of a spatula. Pour the cake batter you prepared into the greased cake mold.
  5. Bake in a preheated 175 degree oven until it swells and turns colour. Take it out of the oven and let it rest on a wire rack until it reaches room temperature.
  6. Pour the melted chocolate over the cake. Serve garnished with pistachios and red fruits, if desired.
