As I mentioned before, my love of food has now outgrown my height and my desire to learn has taken me one step further. I have been doing an internship in the kitchen of one of the most wonderful restaurants in Istanbul for 15 days. I went on a pleasant journey into the past of Turkish Folk Cuisine and I have wonderful teachers accompanying me on this journey. I will talk about these people at length in another article, but first of all, I would like to introduce Kivahan to you.

Anatolia's "Secret" flavors are at Galata Kiva Han...

In Galata Kiva Han, the forgotten and little-known tastes of Anatolian cuisines are coming to your table. These sophisticated flavors, some of which date back to ancient times, are accompanied by Turkish coffee varieties cooked in the sand, flavored teas and traditional sherbets.

Galata Kiva Han is a place that smells of history where you can taste authentic dishes of Anatolian cuisine in Galata Square. Kiva Han highlights its Anatolian identity with everything from its design to its food, from coffee to beverages. The cuisine of Galata Kiva Han, which offers traditional tastes made by modern life for those who breathe in Istanbul, is a concept kitchen created within the framework of little-known, forgotten or Anatolian dishes cooked in different regions. There are references to this concept in its design, which extends from the 2500-year-old Turkish city of Kiva, to the Seljuk Palace Kubad Abad, and from the Ottoman Empire to the present.

Meals cooked by mothers and forgotten by children
The cuisine of Galata Kiva Han derives its strength from Anatolia: The ingredients of local dishes, which change according to the seasons, are obtained from local markets. You can always find some salads, desserts and meals at Kiva Han. But especially the main dishes change every day. Salads, soups or meatless vegetables are added one or more each day.
