I always say that when I was little, I was very envious of people whose family, relatives and friends sent materials from their hometown. As I got older, products started to come from all over Turkey, thanks to myself and my job. Thus, I had the opportunity to reach the most delicious dishes from the region :)

Urla has become like the epicenter of Aegean grasses in recent years. She launched many women's initiatives at the same time. I often include gift products sent to me in my stories. Mixed Aegean herbs containing tangle, spinach, nettle, radica are a complete healing store.

Of course, my people wouldn't forgive me if I didn't make a pastry while they were there 😄 Let my favorite pastry with potato and spinach come 💕

How to Make Mixed Herb Pastry Recipe?

  1. Boil the herbs in boiling water for 2-3 minutes and shock them in cold water. Set aside to drain well.
  2. Chop the onion for cooking and put it in the pan with the oil.
  3. When the onions turn pink, add the herbs and sauté until the water is gone. Set the stuffing aside to cool.
  4. For the sauce of the pastry, whisk together the oil, milk and egg.
  5. Take the yufka on the counter, cut it in half and apply the sauce you prepared on the half. Spread the roasted herbs in strips on the wide part of the phyllo and roll the phyllo.
  6. Place it in the middle of a round tray by wrapping it in the shape of a rose, just like making a puff pastry. Do the same for all remaining phyllo.
  7. Spread the remaining sauce over the pastry.
  8. Bake in a preheated 180 degree oven until nicely browned (approximately 30-35 minutes).
