Karatay Breakfast: Apple Salad
Dear Sinem's Karatay Diet adventure continues...
I've talked about Karatay breakfast before. A plate full of eggs, cheese, olives, tomatoes, peppers, cucumbers, greens, walnuts, almonds, hazelnuts, pistachios, dried apricots, an incredibly satisfying breakfast. Even if you make a different omelet every day, or if you eat different dried fruits, different greens, different nuts every day, sometimes people get bored. Recently, I wanted to have a different breakfast. Actually, I can eat eggs every day, but I don't eat eggs once a week. I said let that day be today and rolled up my sleeves. In the Karatay Diet, fruits are subject to limitations and must be consumed at mealtimes. Green apple is one of the most innocent fruits. There were green apples, arugula, and parsley in the cupboard. I decided to make a different salad. Here is the recipe. It was really enjoyable to eat a big plate of salad for breakfast :)
Karatay Breakfast: Ingredients for Apple Salad Recipe
- Rocket
- parsley
- 1 green apple
- 1 tea glass of walnuts, hazelnuts, almonds, pistachios (I only used walnuts)
- 2-3 dried apricots
- As much cheese as you will eat for breakfast (I put İzmir Tulum) A little lemon and olive oil
preparation
- After chopping the arugula and parsley, I sprinkled the diced green apples, dried apricots and cheese on the greens. After breaking the walnuts with my hand, I squeezed a little lemon on it and drizzled olive oil on it. At that time I did not have it at hand, but 1 teaspoon of flaxseed can also be added. Then I ate with pleasure. It was a very hearty, light sweet-sour breakfast salad. Similar salads can be prepared at home with different ingredients, only parsley and dill can be added next to the apple, 1-2 prunes can be used instead of dried apricots, different cheeses can be tried, nuts can be added from whatever is available. I'm sure they will all be delicious ;)
