Green Salad with Caramelized Pineapple
I made this recipe a few months ago when I was on a diet, but I was so hungry that I ate it before I could even take a photo :)
I think I like pineapple juice more than pineapple itself. I can't eat it like an orange or an apple. In the recipes I usually apply, I cook it lightly and caramelize it in the pan, just like in this salad. I think it is both softer and tastier :) If you want, instead of cutting onions into rings, you can chop the onions and add some sugar and caramelize them just like pineapples.
One of the reasons I chose this recipe today is that I'll be kicking myself out soon and finishing up the final preparations for tomorrow's barbecue party.
Well, see you tomorrow with our future friends.. Goodbye :)
