Ingredients for Pumpkin Peas Summer Pasta Recipe
- 1 pack of Our Bow Pasta
- 2 liters of water
- 2 medium green zucchini
- half a bunch of fresh mint
- 2 cloves of garlic
- 2 cups boiled fresh peas
- 3-4 tablespoons of olive oil
- 1 tablespoon of lemon zest
- Salt
- grated parmesan
How to Make Summer Pasta with Zucchini and Peas?
- Boil our bow pasta for 8-10 minutes according to your taste.
- While the pasta is boiling, chop the zucchini, mint and garlic.
- Heat the olive oil in a large skillet over medium heat.
- Take the zucchini you cut into the pan. Saute for 2 minutes or until the zucchini begins to soften slightly.
- Add the peas, garlic, lemon zest.
- Cook, stirring occasionally, for 3-5 minutes or until peas are tender.
- Add the chopped mint and sauté a little.
- Add the sautéed vegetables to the boiled pasta and mix.
- Serve with Parmesan cheese.
