Grilled Halloumi Cheese and Vegetable Sandwich

I have a sandwich recipe for you from Halloumi Cheese, which I have loved since my childhood and ate at every opportunity… My cheese came from Cyprus, its homeland this time :) I say it has come because unfortunately I haven't had the opportunity to go and eat it on the spot yet, but it's close!

This time, this sandwich, which turns into a delicious meal with grilled vegetables other than salad, is my favorite for both breakfasts and lunches.
You may be surprised how such a simple recipe turns into a feast when bell peppers and capia peppers are involved :) The most important point you should pay attention to when cooking halloumi cheese is that the grill is very hot so that it does not stick. If the grill is not hot enough, the cheese starts to soften and spread without any grill marks. When that happens, you'll have a hard time translating it.

Ingredients for Grilled Halloumi Cheese and Vegetable Sandwich Recipe
- 4 slices (low salt) halloumi cheese
- 1 medium eggplants
- 1 medium zucchini
- 1 red capia pepper
- 4-5 leaves of arugula
- 2 bell peppers
- 2 tablespoon of olive oil
- Salt
- Black pepper
- Fresh thyme
How to Make Grilled Halloumi Cheese and Vegetable Sandwich Recipe?
- Wash the zucchini and aubergines and cut them obliquely. Remove the seeds of the capia pepper and cut it lengthwise into 2 parts.
- Preheat your toaster to the highest temperature.
- While the grill is heating, take the vegetables in a deep bowl and add olive oil, salt and pepper and mix. Cook the vegetables on the heated grill and put them on the plate.
- Cook the halloumi cheese on the grill in the same way, both sides and back.
- Cut the sandwich breads into 2 pieces and transfer them to the serving plates.
- Serve with arugula, grilled vegetables and 2 slices of grilled halloumi cheese.
