Oyster Mushrooms and Cheddar Pancakes

This weekend, we took advantage of the nice weather and escaped to the summer house. My current home is also very quiet and calm, but the peace there is completely different. Over the years, we had a pancake ritual on the weekends we spent there :) I prepare delicious and practical breakfast dishes with alternative ingredients.
Oyster mushrooms are one of the types of mushrooms that I have been enjoying in my kitchen for a long time. Also known as poplar mushroom. In fact, you already oyster mushroom saute ve peppered oyster mushroom I mentioned its structure in the recipe.
These leaf-shaped mushrooms have a woody texture towards the stems they attach to and are very difficult to cook. That's why you need to cut off the white stem parts. If you don't cut it, the stems will last while trying to cook, and the thin leaves can burn.

Ingredients for Oyster Mushrooms and Cheddar Pancakes Recipe
- 2 pieces of dough
- 500 gr. Oyster mushroom
- 1 small onion
- 3-4 tablespoons of olive oil
- 1 cup grated fresh cheddar cheese
- 1 pieces of eggs
- butter
- salt
- black pepper
How to Make Cheddar Pancakes with Oyster Mushrooms?
- Cut off the tough stems of oyster mushrooms and dice them. Chop the onions as well.
- Put the mushrooms in the pan with olive oil. Add some salt and fry for 2 minutes.
- Add the chopped onions to the pan and fry them with the mushrooms.
- Saute until the onions are transparent and the mushrooms are drained and lightly browned.
- Remove the cooked mushrooms from the heat to cool and grate the cheddar cheese.
- Lay the phyllo on the counter, spread half of the mushroom mortar in the middle of the phyllo and sprinkle half of the freshly grated cheddar cheese.
- First fold the dough so that the top and bottom parts meet in the middle, brush the parts facing you with beaten egg.
- Then create a square by folding the right and left parts of the dough. (Apply an egg to the inner part so that it does not open)
- Heat the Teflon pan, add 1 tablespoon of butter and let it melt.
- Place the pancake you prepared in the heated pan. Cook by shaking gently so that it does not stick and the surface is oiled.
- When one side of the pancake is browned, turn the other side and cook until golden brown as in the photo.
- Prepare and cook the other pancake in the same way.
- Take the cooked flatbread on the cutting board, roll it and serve by slicing.
