Ingredients for Tripe Soup Recipe

500 g veal or sheep tripe
2 spoonful butter
2-3 cloves of garlic
1 medium onion
Half a lemon
2 tablespoons of flour

How to Make Tripe Soup Recipe?

Wash the cleaned tripe in 3-4 waters. Put enough water to cover the tripe by 2-3 inches in a deep and wide saucepan, add salt, garlic, peeled lemon and onion cut into 4 parts and boil over medium heat until the tripe softens (with a spoon while boiling, remove the foam that accumulates on it). Cut the cooked tripe into pieces the size of sugar cubes on a cutting board and put them in a bowl. Strain the remaining water and transfer it back to the saucepan.

In another pan, fry the butter and flour until it smells, add the strained tripe water little by little with the help of a ladle (so that the flour does not clump) and whisk quickly. After adding all the water, add the tripe pieces. 15 min. boil more. Roast the red pepper and butter in a small saucepan and drizzle over the soup.

If desired, serve the soup with crushed garlic and vinegar sauce while taking it to serving plates.
