Wherever there is internet and computer is my workplace, although this sounds pretty good, it's getting harder and harder to separate work and vacation. When did you work, when did you rest, etc. The first half of the last 15 days was busy, but after that I had time to spare for myself, especially for the books I left unfinished. It was nice to finish 1 book without having trouble focusing.

This year, I will spend the whole summer calmly and quietly in my summer house, and I will never return to the intensity and heat of Istanbul. But it doesn't always turn out the way we want. Let's say when the age is a little older :)

I made it for a magazine before. English Muffins we know with muffins it doesn't matter. Muffins are cakes baked in a unique tray or individual molds. These muffins are bread, they are smaller versions of our flatbread, obviously :)

Finally, poaching eggs in water is a simple recipe, but requires a lot of attention. If you follow my recipe, you can cook lots of delicious eggs. If you want a more apricot-like egg, you can increase the cooking time by 1-2 minutes.


For the Pan Bread:

  • 500 g flour
  • 1 large eggs
  • 10 g instant yeast (1 pack)
  • 5 g baking powder (1 teaspoon)
  • 6 g salt (2 teaspoons)
  • 6 g granulated sugar (2 teaspoons)
  • 255 g water (1 glass + half a tea glass)
  • 30 g olive oil (2 tablespoons)

How to Make English Muffin and Poached Egg Sandwich Recipe?

  1. Weigh the dry ingredients and transfer them to the mixing bowl of the mixer.
  2. Add 1 egg and olive oil into it.
  3. Add half of the water using the hook. Start kneading at low speed.
  4. Add the remainder of the water and mix first at low speed and then at high speed.
  5. Let the dough you prepared rest for 20 minutes to ferment.
  6. Divide the leavened dough into 6 parts, roll it out and press it lightly, then leave it to rise for another 20 minutes.
  7. Lightly oil a thick-bottomed pan, remove excess oil with a napkin.
  8. Cook the breads you have prepared on low heat, front to back.

For the Spinach Saute:

  • 3 tablespoon of olive oil
  • 1-2 tablespoons of peanuts
  • Half of 1 small onion
  • 200 g spinach
  • Salt, Pepper, Paprika

How to Make English Muffin and Poached Egg Sandwich Recipe?

  1. Chop the onion into small pieces. Finely chop the dried tomatoes. Wash the spinach, remove the stems and chop them.
  2. Saute the peanuts and onions in olive oil until they turn pink. Transfer the spinach to the pan, season with a little salt and pepper, sauté for 2-3 minutes and set aside.

For the poached eggs:

  • 1,5 liters of water
  • half a teaspoon of vinegar
  • Fresh and refrigerated eggs (by number of sandwiches)

How to Make English Muffin and Poached Egg Sandwich Recipe?

  1. Fill a deep pot with 1,5 liters of water, add vinegar to it. When the water boils, turn the water down (not too bubbling, but not too low for a long time).
  2. Crack the first egg into a bowl (the yolk should not burst), gently stir the water in the pot and carefully drop the egg into the water. Cook for 3 minutes, if you want the yolk to be fully cooked, you can extend the time a little.
  3. Remove the eggs with a slotted spoon and set aside.
  4. Divide the sandwich bread crosswise into two bars.
  5. Divide the sauteed spinach on the bases, and place the thinly sliced ​​avocados on top, if desired.
  6. Place 1 poached egg on top of avocado slices and serve.
