Hot Sweet Sauce (Homemade)

The expression “We have come to the end of another week with its hot and sweet” has found its full meaning with this recipe :) I don't know if it is the recipe I prepared or it is the last working day of the week. I am very happy today. Although my work has been delayed to the weekend in the last weeks, I have started to make very enjoyable plans and even reservations for the coming weeks. That doesn't make me work with more determination, you know :)
Anyway, let's come to our hot sweet sauce, I first tasted this sauce years ago in a fast food restaurant that serves Chinese dishes. Its bitter sweetness gave such a wonderful flavor to the sautéed chicken I ate that I lost my mind. Afterwards, every time we stopped by, I ate my chicken with the same sauce. Later, bittersweet (sweet chili sauce) sauces started to be sold in the markets, even I bought it once, but I could not get the same taste.
I decided to evaluate the leftover peppers from the hot and sour soup I prepared earlier. When you have chili pepper, you cannot add it to everything and consume it. At least I can't eat that much pain. So I decided to prepare my homemade bittersweet sauce. Based on my previous burning experiences, I did not neglect to use gloves this time.
Don't forget to remove the seeds from the chili peppers, your sauce may be too hot when the seeds are involved.

Ingredients for Hot Sweet Sauce (Homemade) Recipe
- 5-6 chili peppers (5 is better for those who like less spicy)
- 3-4 cloves of garlic
- 2 teaspoons of rice vinegar
- 2 tea glass of granulated sugar
- half a cup of water
- 2 teaspoons of wheat starch
- 1 tablespoons of water
- a small pinch of salt
Fabrication:
- Cut off the stems of the peppers, cut them in half lengthwise and remove the seeds. (I recommend you to use gloves because the pain does not come off easily)
- Peel the garlic, cut the peppers that you removed the seeds into 2-3 pieces.
- Put the peppers and garlic in the food processor and run it. If the peppers are large, add 1 tea glass of vinegar and run them again, so they will break down more easily.
- Put the stuffed in the robot in a small sauce pan, add the remaining vinegar, water and 2 tea glasses of sugar and cook it for 10 minutes, stirring over low heat.
- In a small bowl, open 2 teaspoons of starch by adding 1 tablespoon of water. Add 1-2 tablespoons of the sauce in the pot and mix.
- Add the starch you opened to the sauce pan, and mix it to prevent lumps.
- After 1-2 minutes, remove the sauce that has thickened from the stove. Once peeled, put it in a bottle or jar. Store in the refrigerator.
Hi, thanks for the nice sweet hot sauce recipe. It was so good that as you said, when we use other vinegars, the vinegar taste is dominant (I used apple cider vinegar). BUT Green salads are not exactly the same as sweet chili sauce. Bitter but so sweet.
