Good morning everyone from a wonderful Sunday morning :)

When we say that this spring will never come, it has been an incredibly pleasant weather for 2 days in Istanbul. With his coming, our laziness passed and our blood began to boil and we began to throw ourselves out. Not only the world, but also my food became colorful and chirpy :)

Ingredients for Carrot Potato Salad Recipe

  • 4 medium potatoes
  • 2 medium carrot
  • 3-4 sprigs of scallions
  • 1 medium red onion
  • 1 pinch of fresh thyme
  • 1 pinch of fresh mint

Water for boiling potatoes and carrots

For the sauce:

  • Juice of 1 lemons
  • 1 tea glass of olive oil
  • salt
  • black pepper
  • optional pomegranate syrup or vinegar

How to Make Carrot Potato Salad Recipe?

  1. Wash the potatoes and carrots. Peel their skins and boil them in water with a little salt (about 15 minutes).
  2. While the potatoes and carrots are boiling, wash and finely chop the onions and fresh spices.
  3. Chop the potatoes into cubes, grate the carrots with the fine side of the grater, add the other ingredients and mix without crushing them with the help of 2 spoons.
  4. Whisk the sauce ingredients together in a small bowl. Add to the top of the salad and mix.
  5. After resting in the refrigerator for at least 1 hour, serve.
