Carrot Pumpkin Tarator

In the heat of this summer, we continue our light and delicious salad & appetizer recipes. Carrot zucchini tarator is a delicious flavor that can be eaten at every meal in our house, even mixed with rice and pasta.
I roast the zucchini and the carrot separately so that the zucchini does not dilute the carrot, both of them are slightly palatable.
Strained yogurt is a must because it does not release water even if it waits. Dill goes well with this appetizer, I say add it.

Ingredients for Carrot Zucchini Tarator Recipe
- 3 medium carrot
- 2 medium zucchini
- 1/2 tea glass of olive oil
- 2-3 cloves of crushed garlic
- 4 heaping meals of strained yogurt
- Salt
- 1 pinch of dill
For service:
- Red pepper
- Olive oil
How to Make Carrot Zucchini Tarator Recipe?
- Grate the carrot and zucchini. Heat the olive oil, put the carrot in the pan, sauté until it turns brown and put it in a mixing bowl.
- Saute the zucchini too and put it in a mixing bowl. Add garlic, salt, dill and yogurt to the vegetables and mix.
- If desired, sprinkle crushed walnuts on top and serve with hot red pepper oil.
