This year, a cake with raisins left over from the ashura was enjoyed :) The one with carrots and lots of spice is at home Perfect Carrot Cake I am sure that when you cook this recipe, you will definitely taste it. Although it looks hard from the outside, it has a soft heart thanks to the carrots :)

When it is roasted with walnuts, its flavor increases as its oil comes out. From now on, I say try it before adding it to the cake.

I don't know if it's because of pregnancy or because the weather is getting colder, but these days, I'm craving cakes with a little more sugar. For this reason, I have increased the 1 cup measure I always use to 1,5 cups. The amount can be reduced when the carrots are sweetened a little more, but the size is ideal for sweet cake lovers. Let's just have 1 slice to eat, right? :))

Ingredients for Carrot Walnut Cinnamon Ginger Cake Recipe

  • 3 pieces of eggs
  • 1,5 cup powdered sugar
  • 1 water glass measure of oil
  • 2 water glass flour
  • 1 package baking powder
  • 1,5 cup of grated carrots
  • 1 cup of white raisins
  • half a cup of walnuts
  • nutmeg with the tip of 1 teaspoon
  • 2 teaspoon of cinnamon
  • 1 teaspoon of grated fresh ginger
  • 2 cloves
  • optional cardamom (in 1 cardamom)
  • 1 teaspoon orange zest

For the cream:

  • 1 pack of fresh cream cheese
  • 3-4 tablespoons of powdered sugar

How to Make Carrot Walnut Cinnamon Ginger Cake Recipe?

  1. Squeeze the peeled and grated carrots in your hands, drain the juice as much as possible and set aside.
  2. Saute the walnuts for 1-2 minutes in a pan without oil and reveal their oil and smell.
  3. Beat the eggs with granulated sugar in a deep bowl.
  4. Add oil and continue whisking until the granulated sugar completely melts and becomes 3-4 solids.
  5. When fully mixed, add the flour, baking powder, cinnamon, cloves, nutmeg, powdered cloves, fresh ginger and orange zest and whisk.
  6. When the mixture becomes smooth, add the raisins, walnuts and carrots and continue mixing.
  7. Grease the cake tin and place it on the tray. Pour the cake mix into the mold.
  8. Bake in an oven preheated to 180 degrees for about 45-50 minutes.
  9. Before taking it out of the oven, check with a toothpick whether it is cooked or not. If the toothpick comes out dry, take the cake out of the oven and let it cool.
  10. Beat cream cheese and powdered sugar. Spread the cheese cream on the cooled cake and serve by decorating as you wish.

    oh wow… the smell made in the house while it was cooking.. delicious taste… just what I wanted.. i loved it… we started eating it before we could take a photo.. it was over immediately. everyone loved it… i will make it again soon and take a photo
