For 20 years, I have been making bulgur by soaking bulgur in water and roasting tomato paste with onions, following my mother's recipe. 

This time I tried to make it with the recipe given to me by Auntie Bediş from Hatay.

Even while preparing Hatay Style Sterile We talked about it, some people add garlic but not cumin. Some people knead it dry without water and swell it with tomato sauce. Some people knead for a long time, sprinkling water from time to time. I liked this method very much too. I definitely recommend you to try it.

Ingredients for Hatay Style Kısır Recipe

  • 2 cups infertile fine bulgur
  • 1 tablespoon of red pepper flakes
  • Cumin
  • Salt (add carefully if the tomato paste is salty)
  • 2 tablespoon of pepper paste
  • 1 tablespoon tomato paste
  • 5-6 tablespoons of pomegranate syrup
  • 1 glass of olive oil
  • Juice of 1 lemon
  • Half a bunch of parsley
  • Half a bunch of fresh mint
  • 5-6 sprigs of green onions
  • Lettuce for serving

How to Make Hatay Style Kısır Recipe?

  1. Rinse bulgur quickly in cold water and drain.
  2. Start kneading by adding tomato paste and spices.
  3. When it starts to thicken, add pomegranate syrup and olive oil and continue kneading.
  4. Add all the greens you chopped and mix without crushing.
  5. Serve with lettuce.
