Earlier, I talked about practical recipes that I will share for Ramadan. Even though I will be shooting all day, I wanted to introduce you to this pastry recipe, which I am sure you will like :) I think if you try it once, you can prepare it at every opportunity throughout the year.
Some recipes use tomato paste, but I prefer to use olive salad with sauce instead of tomato paste. Green olive salad is usually available in markets or delicatessens, but I wrote sliced green olives in case you can't find them.
If you can find it, I definitely recommend you to try it with green olive salad. Finally, although it is fried, it is very light.

Ingredients for Hassa Pastry Recipe
- 3 pieces of dough
- 1 egg white
- 100 g sliced green olives
- 2 pinch of dill
- 2 pinch of fresh mint
- 100 gr Tulum Cheese or Feta Cheese
- 4 sprigs of scallions
- 4-5 tablespoons of chopped walnuts
- 2 tablespoon of olive oil
To fry:
- Vegetable oil
How to Make Hassa Pastry Recipe?
- Finely chop the mint, spring onion and dill. Take it in a bowl and add the green olives.
- Add the crumbled cheese, olive oil and walnuts and mix.
- Divide the dough into 2 parts. Sprinkle some of the stuffing you have prepared on the dough.
- Starting from the cut part, wrap it in the form of a roll and stick the end by applying egg white.
- Wrap all the rolls from right to left, like a rose pastry.
- Put some oil in the pan and heat it, fry the pastries first on one side and then on the second side and transfer them to a plate lined with paper towels. Serve hot or warm.
