Purslane Meal with Bulgur and Green Lentils
Hello Dear Friends,
Purslane is never missing from our table. When I say salad, yogurt, meat, lentils, I try to eat it often and feed it to my daughter. It is wonderful to cook this nutritious and hearty recipe, which I make especially with spinach in the winter, with purslane in the summer.
It is a simple and wonderful pot meal, with some yogurt on the side, I think it's a complete meal. Isn't that what we want in the summer :) Let's get the ice-cold watermelon from me too :)

Ingredients for Purslane Dish with Bulgur with Green Lentils
- 2 vineyard purslane
- 1 teaspoon of green lentils
- 4 tablespoons of bulgur
- 1 medium onion
- 1-2 cloves of garlic
- 3-4 tablespoons of olive oil
- 1 large tomato grated (1 tablespoon tomato paste or some tomato sauce can also be used)
- 1,5 water glass of water
Fabrication:
- Boil the green lentils in 2-3 glasses of water.
- While the lentils are being boiled, chop the purslane that you cleaned and cleaned coarsely. Chop the onion and garlic.
- Take the olive oil in the pan, add the onion and garlic on top and fry it until it becomes transparent.
- Add chopped tomato or tomato paste and fry until fragrant.
- Add bulgur and boiled green lentils and mix. Add pinch of purslane and mix. Finally, add the water and salt and close the lid of the pot.
- Cook on high until boiling, then cook on low heat until the bulgur is cooked. Serve hot or warm.
