Purslane is never missing from our table. When I say salad, yogurt, meat, lentils, I try to eat it often and feed it to my daughter. It is wonderful to cook this nutritious and hearty recipe, which I make especially with spinach in the winter, with purslane in the summer.

Ingredients for Purslane Dish with Bulgur with Green Lentils

  • 2 vineyard purslane
  • 1 teaspoon of green lentils
  • 4 tablespoons of bulgur
  • 1 medium onion
  • 1-2 cloves of garlic
  • 3-4 tablespoons of olive oil
  • 1 large tomato grated (1 tablespoon tomato paste or some tomato sauce can also be used)
  • 1,5 water glass of water

Fabrication:

  1. Boil the green lentils in 2-3 glasses of water.
  2. While the lentils are being boiled, chop the purslane that you cleaned and cleaned coarsely. Chop the onion and garlic.
  3. Take the olive oil in the pan, add the onion and garlic on top and fry it until it becomes transparent.
  4. Add chopped tomato or tomato paste and fry until fragrant.
  5. Add bulgur and boiled green lentils and mix. Add pinch of purslane and mix. Finally, add the water and salt and close the lid of the pot.
  6. Cook on high until boiling, then cook on low heat until the bulgur is cooked. Serve hot or warm.
