Baked Eggplant Slices with Halloumi
In my opinion, eggplant is one of the most delicious vegetables in the world; embers, salad, meat, fries, pickles, that is, whatever is made is accepted. Of course, especially the fries with tomato sauce, but since I gained at least 2 kilos during the holiday, I couldn't fry it directly (let's eat it with bread dip) and I had the trouble of making a healthy, low-calorie alternative eggplant dish for myself… During this search, I thought of creating a synthesis from my favorite ingredients. Halloumi cheese, tomatoes and eggplant really work wonders. Even my wife, who squints at everything other than chicken dishes, ate the food on her plate with pleasure. Ingredients for Baked Halloumi Eggplant Slices Recipe
- 2 small eggplants
- 2 pieces of tomato
- 1 small packet of halloumi cheese
- 3 cloves of garlic
- 1 paprika (red pepper with meat)
- Black olives (1 per eggplant slice)
- Olive oil
How to Make Eggplant Slices with Halloumi in the Oven Recipe?
- Wash the eggplants and slice them in 1 cm sizes without peeling them.
- Soak in salted water until baking.
- Peel the garlic, mash in a pestle and mix with olive oil.
- Set your oven to the highest setting and heat it up.
- Grease the baking tray (I used porcelain) on which you will cook the eggplants by applying the mixture you have prepared with the help of a brush.
- Place the eggplants on the tray and grease them with a brush, bake for 7–8 minutes (be careful not to dry out too much)
- Slice the tomatoes and halloumi cheese and arrange 1 slice of tomato and 1 thin slice of halloumi on each eggplant.
- Garnish with julienne slices of pepper and olives.
- Cook the halloumi cheeses until they are well browned, garnish with corn kernels if desired and serve.
