Bakery Rice Pudding – Hamsikoy Rice Pudding

Years ago, in my first oven rice pudding recipe, we used to mix 1 egg yolk into it, as we learned from our elders. Afterwards, we saw that there was no need for this at all. What was the need to add eggs to the rice pudding, which is easily fried anyway. Even the water uptake rate of the rice we use has changed over time. Even when I put water in the old ratio and cook rice, it gets clicky, so I reduced the starch a little while increasing the rice boiling water. While I was doing video shoots, I thought I would share with you my practical recipe that you can make with a little milk.

Ingredients for Bakery Rice Pudding – Hamsikoy Rice Pudding Recipe
- 5 glasses of milk (1 liter)
- 1 cup powdered sugar
- 2 tablespoons of wheat starch
- 1 cup of rice (small tea cup)
- 2,5 cups of water to boil the rice
Oven Rice Pudding – How to Make Hamsikoy Rice Pudding Recipe?
- Take 1 tea glass of rice and 2,5 glasses of water in a small sauce pan, boil it until the rice is soft and absorb the water, and leave it to cool.
- In a small bowl, mix the starch, sugar and 1 glass of milk.
- Add the mixture to the cooked rice. Boil on high heat until the milk boils, then cook on medium heat until it thickens.
- The consistency will be slightly watery than that of pudding, you will feel that it is getting heavier and holding the spoon while mixing.
- Add the vanilla to the rice pudding that has its consistency and distribute it to the oven dishes you have placed on the baking tray, leaving a space above them.
- Add water to the tray without splashing the rice pudding. Open the grill of the oven and put the rice pudding in the oven.
- Cook until the top of the rice pudding is browned. Take the cooked rice pudding out of the oven, paying attention to the hot water.
- Let it rest until it reaches room temperature. Refrigerate, cool and serve with cracked hazelnuts.
