Hello Dear Friends,

My recipe for today belongs to my favorite soup since childhood. I will never forget, when I was 5-6 years old, my deceased grandfather took me to the kebab shop for soup because I loved him very much :)

Do not look now that eating and cooking have an important role in my life. When I was a kid, I would choose incredible food and wouldn't squint at a lot of things. When I was such a child, they didn't take me around to eat, of course :)

My favorite things were ezogelin soup and kadayif dessert :) My dear grandfather used to take me to a nearby kebab shop, first chop pita in a little soup and eat it, and then sing kadayif with lots of pistachio.

Hey gone days hey... Now that I've become a big woman, I remember those days with longing and love :)

The Ezogelin Soup I prepared yesterday took me back to those days. Its taste is so good that you cannot find it in ready-made soups.

Ingredients for Ezogelin Soup Recipe

  • 1 cup of red lentils
  • 1 coffee cup of bulgur (Turkish coffee cup)
  • Half a coffee cup of rice (Turkish coffee cup)
  • 1 medium onion
  • 2 cloves of garlic
  • 2-3 tablespoons of margarine or butter
  • 7 water glass of water
  • optionally 1 bouillon
  • salt

For the licorice:

  • 2 tablespoons of flour
  • 1 meal spoon tomato paste
  • 1 teaspoons of mint
  • 1 teaspoon of red pepper
  • 2 tablespoons of oil
  • 2 water glass of water

How to Make Ezogelin Soup Recipe?

  1. Chop the onion and garlic into small pieces. Put the margarine in a saucepan and heat it. Add the onion and garlic and fry until lightly browned.
  2. Add lentils, bulgur and rice to the pinking onions and fry for 1 more minute.
  3. Add salt and 7 glasses of water and let it boil over medium heat.
  4. Take oil in a larger pot. Add the flour and fry it. Add the tomato paste to the roasted flour and fry for 1 more minute.
  5. Mix by adding the spices and add 2 cups of hot water and continue mixing so that there are no lumps.
  6. Add the legumes in the other pot, which is cooked and softened, to the floury water you have prepared together with the water and mix.
  7. Bring to a boil and remove from the stove. Serve with roasted oil and chili peppers, if desired.

    I tried it today but it was too thick I put 2 liters of water and it's still too dark :( I think it should be made with 1 cup of lentils, not 1 cup of lentils, there is no need to add flour, it's much thicker than the soup, unfortunately :(
