How to Make Butter at Home

Hello Dear Friends,

We started to make many of our basic foods at home. Since my daughter was 6 months old and we started making yoghurt, we have also been consuming cream cheese for breakfast. As a matter of fact, we buy 2 liters of raw milk every week and I ferment 5-6 jars of yogurt for daily consumption from it. (You can find my article on how to make yogurt at home here.)

I used to make baby curd or curd cheese for my daughter's breakfast by curdling the remaining milk with yogurt or vinegar. (The recipe is here.)

what is buttermilk

After boiling raw milk for the last 1,5 months, when it came to room temperature, we started to put it in the refrigerator. In the morning, we would take it out of the fridge and separate the cream. In this way, the creamer is thicker and easier to collect. The trick is to put the pot in the refrigerator with the lid open. We started to store this cream in a container in the freezer. 

On Sunday morning, when the container was full, we said ok, it's time to make butter :) The result is that we collected about 950 g of cream.

So there is only one difficulty in making butter and that is being patient to collect milk cream from a small size like us :)

Now that we get into the subject of homemade butter, we need to tell 1-2 more things. The first of these is buttermilk, buttermilk or whey. We also obtain this water when making curd. recipe here and very useful. We can use this water in many dishes.

The other is to sweeten the oil with salt, if desired. After separating the buttermilk and washing the butter, you can add salt and mix it. Not only salt, but many different spices, You can season it with fresh herbs.  Adding salt also extends the life of the oil.

How to Make Butter at Home Ingredients for the Recipe

  • 1 kilo of cream
  • 1 cup lukewarm water (warm enough for fingers)
  • 1 liter of cold water (ice water)
  • room temperature water to wash off the oil

How to Make Butter at Home How To Make The Recipe?

  1. Take the cream you collected from the freezer and leave it at room temperature until it thaws. Take the cream in the mixer and beat it for 1-2 minutes at medium speed. When the cream becomes lumpy, pour warm water into it and continue whisking. 
  2. When the cream becomes lumpy, add 500 ml of iced water and whisk it first at low speed and then at high speed. Continue this process until the oil has recovered and separated from its water.
  3. Collect the separated oil with your hands, squeeze it and put it in a clean and deep container. Wash the oil until 2-3 water wash water comes out clean.
  4. Spread the cling film on the table, put the oil in the middle and wrap it in shape. Keep it at 0 degrees in the refrigerator or in the freezer.

Note: There are a lot of splashes while whipping the cream. Close the mixer's protective cover.

    I bought raw milk, I tried it as you said, but it did not go beyond diluted cream. I guess something is missing.
