  • 4 cups + half a tea glass of flour (500 g)

  • 1 tablespoon of salt

  2. Wait about 3-4 minutes until the yeast froths and activates.

  4. While mixing, stop the mixer at intervals of 3 minutes, scrape the dough from the dough hook and mix again. Start at low speed and gradually increase to high speed. Knead in this way for a total of 15 minutes. The dough will be smooth and supple like gum.
  5. Take the kneaded dough in a deep bowl, fold it from 4 sides to the middle and collect it, leave it to ferment for 15 minutes – 30 minutes depending on the ambient temperature.
  6. When the dough is doubled, take the fermented dough on the floured counter, divide it into 2 parts and collect it and make meringues.
  7. Cover them on the counter with a cloth and leave to ferment for another 30 minutes, then shape them and place them on a baking tray with greaseproof paper.
  8. With the help of a sharp knife or a bread roulette, make a deep incision across the dough.
  9. Bake in the preheated oven at 200 degrees for 25-30 minutes, without a fan, if possible, until golden brown.
