Our adventure this week is about making pasta at home. During my internship, I had the opportunity to make pasta many times in culinary, but I could not prepare it at home because I did not have any machine to cut noodles and pasta.

Now you will say that if it is not in your house, it is not in anyone's house. Of course, that's not the case :) The reason why I can't buy the pasta machine is that if you're going to buy it, I won't insist that I buy a Kithen Aid pasta apparatus. (It has a kitchen aid stand mixer and many tools from can opener to lemon squeezer.) Not to mention that the prices of the tools have increased as I wait, and they are now up to 699 liras.

Anyway, in the end, we couldn't buy this apparatus and decided to buy a suitable manual machine. During our regular Tahtakale tour on Saturday, we looked at the shop selling many cake materials and kitchen equipment. Again, we found the most affordable one in Nuans. There are machines on the market that start at 36 liras and range in price from 150 to 250. We decided to buy the most suitable one, saying that it is made in China, which is cheap as always, and I will not set up a workshop at home anyway.

The machine, which did not cause any problems at first, started to have problems between 2 and 3 after 8-9 runs and started to turn idle. The thinner the gap 1, the thicker the gap 9 opens. In order to roll out the dough, you need to start from 9 and go up to the number 1. I had to intervene with a little roller to bypass the gap 8-9. Even though we had a little trouble, the pasta we prepared was very good.

Now let's get to the heart of the matter. If you want to buy this type of pasta opener, buy something that costs at least 150 lira. If you say that I will try a little more, you can run away for cheap like me.

Ingredients for Homemade Pesto Ravioli and Pasta Maker Recipe

  • 2 water glass flour
  • 2 pieces of eggs
  • 2 tablespoon of olive oil
  • 2 tablespoons of water
  • 2 tea spoon salt

To boil:

  • 1,5 liters of water

  • 1 small onion
  • 1 teaspoon of olive oil
  • 1 box of cream (200 ml)
  • 1 pinch of nutmeg
  • 6-7 walnuts
  • salt
  • black pepper

How to Make Homemade Pesto Ravioli and Pasta Machine Recipe?

  1. Wipe the flour and pour it on the counter that you have dried. Open the middle with your hand and break the eggs into it.
  2. Add water, olive oil and salt to the eggs and knead.
  3. When the dough is collected and takes the shape in the photo, cover it with a damp towel paper and let it rest in the refrigerator for 30 minutes.
  4. Divide the rested dough into 2 parts. Pass the first half through the machine that you have fixed in the middle no. 8. Then fold the dough in half and pass it through number 7.
  5. Flour the dough from time to time until it is thin enough in the 1st interval.
  6. Spread the rolled out dough on the counter. Put pesto sauce in half at intervals as in the photo. Cover the other half. Cut it with a pizza knife or with cookie cutters like me.
  7. Repeat the process until all the dough is gone.
  8. Boil the pasta in plenty of water for 4-5 minutes. (boiled pasta will rise above the water)
  9. While the pasta is boiling, fry the finely chopped onions in olive oil. Add butter and nutmeg to the onions and cook for 2-3 minutes on medium heat, stirring.
  10. Transfer the pasta to the serving plate. Drizzle some of the sauce on top and serve by sprinkling walnut pieces.
