I have a very, very easy potato croquette recipe for you. Instead of the classic cheddar cheese croquettes, I added some garlic and greens to enhance its flavor.
When you knead it well and let it rest, there is no need to add eggs or breadcrumbs to it.

Ingredients for Homemade Potato Croquettes (With Herbs)
- 500 g boiled potatoes
- 2 tablespoons finely chopped dill
- 2 small clove of garlic
- 2 stalks of finely chopped spring onions
- 2 spoonful butter
- salt
- Black pepper
For the coating:
- 2 large eggs
- 2 water glass flour
- 2 cup of breadcrumbs
To fry:
- Liquid oil
How to Make Homemade Potato Croquettes (With Herbs) Recipe?
- Peel the boiled potatoes, add salt, pepper, butter and start mashing.
- Add the dill, crushed garlic and scallions and mash until completely mixed.
- Rest the puree in the refrigerator for 1 hour.
- Tear off pieces from the potato and form a cylinder.
- Dip first the flour, then the beaten egg, and finally the breadcrumbs.
- Put plenty of oil in the frying pan and heat it.
- Fry the croquettes you prepared in deep and hot oil. Take it to the plate where you lined it with paper towel.
- Serve with yoghurt sauce, if desired.
