Hello Dear Friends,

By the time you read this post, I will already be on my way to the South :) If nothing goes wrong, I would like to share with you a recipe for Friday from there. Artichoke, one of the most beautiful vegetables of the season, I think goes very well with rice. I usually boil the artichokes in lemon water, saute them with onions and flavor them, then fry the rice. Thus, the measure balance of the rice is not disturbed and its aroma remains in its full consistency.

It is important to add dill after the rice is brewed, this will both give a fresher taste and make the dill look greener.

Ingredients for Artichoke Rice Recipe

  • 1 cups of rice
  • 1,5 cups of hot broth or 1,5 cups of hot water + 1 meat bouillon
  • 1 teaspoon of butter
  • 2 tablespoon of olive oil
  • 1 small onion
  • 2 peeled and boiled artichokes
  • Dill

How to Make Artichoke Rice Recipe?

  1. Wash the rice and let it rest for 10 minutes in warm salt water.
  2. Chop the onion for cooking, chop the boiled artichokes into small cubes.
  3. Take the butter and olive oil in the pan, add the onions and sauté until they turn slightly pink. Add the artichokes and sauté for 1 more minute.
  4. Add the drained rice and fry it until slightly translucent.
  5. Add the hot broth to the pot, mix and close the lid.
  6. First, cook it on medium heat until the eyes become eyes, when the eyes turn down, reduce the heat and cook until the water is gone.
  7. Let it rest for 10 minutes with the lid closed. Add the chopped dill, mix and serve.
