Ingredients for Hand Rolled Pastry (Potato) Recipe

  • 5,5 water glass flour
  • 1 pieces of eggs
  • 2 water glass of water
  • half a teaspoon of oil (to add to the dough)
  • 2 sweet spice salt
  • 1 pack of instant yeast (10 g)
  • 2-3 tablespoons of flour to gather the dough
  • oil (about half a glass of water) for spreading on the rolled dough

For the stuffing:

  • 1 kilo of potatoes (for boiled)
  • 2 medium onion
  • salt
  • black pepper
  • Red pepper
  • 5 tablespoons oil

For the top of the pastry:

  • 2 spoonful butter
  • 3 tablespoons oil
  • 1 egg yolks

How to Make Hand Rolled Pastry (with Potatoes) Recipe?

  1. Take 5 cups of flour in a deep yogurt bowl. Add egg, salt, yeast on top, add water and start kneading.
  2. If necessary, add half a glass of flour and knead.
  3. Take the dough on the counter and continue kneading for 3-4 minutes. Roll up the flour by sprinkling it on the counter if necessary.
  4. Take the dough into the kneading bowl and cover it with cling film. Leave to rise until the dough has doubled in size.
  5. While the dough is fermenting, boil and peel the potatoes. Chop the onions for cooking and fry them with vegetable oil.
  6. Add the boiled potatoes to the onions and mash and fry for 1 more minute.
  7. Add salt, black pepper and red pepper flakes, mix and leave to cool.
  8. Put the fermented dough on the counter. Divide into 5 equal balls and roll them in your hand.
  9. Take the first meringue on the floured counter. With the help of a rolling pin, open it in tray sizes. (If necessary, sprinkle some flour to prevent the rolling pin from sticking.)
  10. Apply oil to the rolled dough with the help of a brush and thin the dough by pulling a little with your hand. Sprinkle the potato mortar you prepared with your hands and spread it on the dough.
  11. Roll the dough by starting to roll it from the end and take it to the greased tray and wrap it in the shape of a rose.
  12. Prepare the second phyllo in the same way and add it to the end of the first phyllo and wrap it.
  13. Do the same for the remaining 3 meringues.
  14. Melt the butter, add oil on top. Add the egg yolk to the cooled mixture and brush all the oil into the dough with the help of a brush.
  15. Bake in the oven preheated to 185 degrees for about 50 minutes until the pastry is browned.
  16. Take the baked pastry out of the oven, lay a cloth on it until it reaches its first temperature.
  17. Serve warm or hot.
