This morning started calmly and fairly early for me. Like every evening, I went to bed with my stomach scraped from hunger, and as every morning I woke up wanting nothing. I don't think anyone would be able to make me breakfast if it wasn't for the walnut bread we prepared on Friday night (and if I didn't insist on skipping meals).

This may have something to do with my waking up early :) No matter how early I woke up, I was able to have breakfast with tea etc. in the canteen around 9-10 am throughout my entire teaching life.

I've been going to the gym and pool almost every day for the last 2 weeks. On days when there is no hernia pain, I apply the program given by the teacher. If I have mild pain, I just swim, read and rest. I think that's the best part of running your own business, being able to plan your day the way you want without being dependent on anyone. Of course, when making this plan, you need to know what to put where.

For example, I try to go to the gym 1-1,5 hours after eating. This means that whether I like it or not, I have to get up early and have my breakfast. After the gym, I go home and deal with the daily routines and the work I'm working on. If there is a photo shoot that day, I focus on it. (Preparation, arrangement, selection of dishes and dishes…)

Now let's come to our sourdough walnut bread… Since our sourdough (I named it Rıza) matured, that is, almost 5 months, we have prepared over 50 breads. We have been feeding the yeast regularly for the last 1 month, but we do not have the opportunity to make bread. We started kneading the dough by saying that this longing is enough on Friday, I like walnut or olive bread very much. When my wife said let's throw some walnuts in it, I said why not. Ingredients for Sourdough Walnut Bread Recipe

  • 100 g sourdough
  • 315 g water (at room temperature)
  • 50 g whole wheat flour
  • 455 g bread flour
  • 10 g salt + 10 g water
  • Half a glass of walnut chips

How to Make Sourdough Walnut Bread Recipe?

Time: 10: 00 – Mix the sourdough with 315 g of water and dissolve the yeast in the water. Add the flour, mix until there are no flour lumps, and after kneading, add the walnut crumbs and knead again until it is spread throughout the dough. Cover the dough you prepared with a cloth.
Time: 12: 00 – At the end of 2 hours, take the dough out, add 10 g of salt and the remaining 10 g of water, and knead it again.
Time: 12: 30 – Make the 1st fold.
Time: 13: 00 – Make the 2st fold.
Time: 13: 30 – Make the 3st fold.
Time: 14: 00 – Make the 4st fold.
Time: 15: 00 – Make the 5st fold.
Time: 16: 00 – Make the 6st fold.
Time: 16: 30 – Take the dough on the floured counter, roll it up and cover it with a cloth.
Time: 17: 00 – Put the dough you rested on the counter and put a cloth in it, turn it upside down in the hollow bowl that you flourished abundantly. Take it to rest for 4 hours.
Time: 21: 00 – Turn the dough upside down on oiled paper and put it in a covered cast iron pan. After scratching it with a razor blade, bake it in a preheated oven at 220 degrees for 30 minutes with the door closed and 30 minutes with the door open.
Time: 22: 00 – Take the bread out of the oven, let it rest for 1 hour and serve it.

    I can't make pastry with minus yeast. It's getting tough. Has anyone been able to make Puff puff pastry with minus yeast?

    At first, I was making the folds after hitting the counter and exposing the gluten. Now I am not doing anything.
    I mix the yeast with the flour and the water, and after resting for an hour, I fold it 8/10 times in the container it is in. Then it is kept in the refrigerator for 12/16 hours in the container in which it will be baked. I take it out 2 hours before I put it in the oven so that it comes at room temperature.
    When the oven is at its hottest, I put the bread and bake it upside down until the top is golden brown. Then I cover the top and cook for 20 minutes with only the bottom open. There should be a clicking sound when we hit it on the underside when it comes out of the oven. had to be tough. That's it. I put it on the oven wire and wait for it to cool for a few hours. Then I cut it with a bread knife. I bought a bread knife right away because it cut my finger so badly when I cut it with a regular knife. I recommend it to you too. Since it is very hard, it corrodes the normal knife very quickly. By the way, I'm going to storm the oven, I'm not flouring the oven, I'm making very little oil. It's easy to get out.
